BUTTERMILK WAFFLES
Why I Love This Recipe
These are so much more tasty than regular waffles.
Ingredients You'll Need
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs, separated
2 cups buttermilk (I use powdered buttermilk and include the water for the mixing with the egg yolks)
1/2 cup butter or margarine, melted
Directions
Combine the flour, baking powder, baking soda and salt; set aside.
In a metal or glass bowl bet the egg whites until stiff, but not dry peaks form.
In a mixing bowl, beat eggs yolks until light. Add buttermilk; mix well.
Add dry ingredients and beat until batter is smooth.
Stir in butter.
Fold in the egg whites.
Pour about 3/4 cup batter onto a lightly greased preheated waffle iron.
Bake according to manufacturer's directions until golden brown.
Repeat until batter is gone.
Serve with maple syrup or a fruit sauce.
