Grandma's Pumpkin Bars and Cream Cheese Frosting

Why I Love This Recipe

This recipe has been in my family for 5 generations now. My grandmother has just recently handed me all of the recipes she has had for these past few years. I want to share because I believe something this good should not be kept secret.


Ingredients You'll Need

Pumpkin Bars:

1- 16oz. can pumpkin
1- cup oil
2- cups white sugar
2- teaspoons baking powder
1- teaspoon baking soda
2- teaspoons Cinnamon
1/2- teaspoon salt
4- eggs
2- cups flour

Cream Cheese Frosting:

1- 3oz. package Cream Cheese
1- stick or 1/2 cup butter
2- cups powder sugar
1- teaspoon vanilla extract


Directions

Pumpkin Bars:


1) Preheat oven to 350


2) Mix together all ingredients for the pumpkin bars


3) Grease and flour cookie sheet


4) Pour ingredients into pan


5) Bake for 25 minutes or until done (like cake)


Cream Cheese Frosting:


1) Mix all ingredients until well-blended (should be smooth and thin)


After bars cool spread frosting over the top and serve or store.

This is not a pumpkin bar recipe, but rather a pumpkin cake recipe. It is fluffy like a cake, not dense or crusted like a bar. It tasted good, but I wasn't looking for a cake recipe, so like calling a spade a spade, call a cake a cake.

I make this exact same recipe. A friend gave me a copy after I tried at a church bake sale. It is always a hit and I am asked for the recipe each time. I do use 13x9 pan, though and I double the frosting recipe...Delicious.
