Fried Plantains Served with Guac

Why I Love This Recipe

I love fried green plantains!! They can be served with whatever condiments. As for avocados?! I’ll have avocado with any food. This guacamole recipe is quick and easy to make. Perfect appetizers, or just everyday snacking!


Ingredients You'll Need

3 big green plantains
1 big Florida avocado
Vegetable oil
Water
Minced garlic
1/2 tsp Adobo
1/2 tsp lemon
1/2 tsp black pepper
1/2 tsp matouk’s
1/4 tsp salt
1/2 tsp tajin clasico seasoning
1 tsp Dijon mustard
1/4 cup diced tomatoes
1/4 cup diced bell peppers (green, red , yellow and orange)
1 tsp dried parsley


Directions

Use a knife to cut through the skin of plantains from top to bottom. Use your fingers to pry open & peel off the skin
Cut the plantains into pieces (like to cut them diagonally so that I could have a nice flatten shape)
Fill a large skillet with enough vegetables oil. Heat over medium
Add the plantain slices. Fry plantains until soften (I like to let take that slight golden color)
Season shrimp with adobo. Then, fry on a skillet with 1 tbs of olive oil
In a bowl, combine water, minced garlic and adobo
Using a plantain flattened, gently flatten each fried plantain piece(make sure they’re very flat for the guac)
Deep the flattened plantain in the seasoned water, then, add back to oil and briefly fry to crisp.
Drain on a paper towel and transfer to a large serving plate
Add the guac on top of plantains and serve

Guacamole recipe:
Cut the avocado into small to medium cubes
Add the avocado cubes, onion, lemon juice, diced tomato, bell peppers, Dijon mustard and dried parsley to a large bowl. Sprinkle evenly with adobo, tajin clasico seasoning, matouk’s, salt and black pepper
Using two spoons, toss the guacamole until it is evenly combined. Taste and season with extra salt and seasoning if needed.

Normally, I add corn to it but didn’t have any. Taste really great with them. The corn give the guac that savory taste
