Why I Love This Recipe

I went to a Mexican themed barbeque recently and made this simple dessert. It requires no real "cooking," but really just preparation and purchasing.


Ingredients You'll Need

1-2 Mangoes, cut into bite-size pieces
1/2 Papaya, cut into bite-size pieces
1/2 package of blueberries
5-6 strawberries, hulled and cut into small pieces
1 package blackberries
1 package raspberries
1 lime
sugar
Semita de Arroz (Rice Cakes)


Directions

Place all fruit except lime into a bowl and sprinkle with 1-2 Tablespoons of sugar (sweeter fruit = less sugar).


Squeeze the juice of one lime all over fruit - it's good to roll the lime against the countertop before cutting it. Mix gently with your hands and put the fruit salad into a covered container overnight to allow the juices to come out of the fruit a bit.


For your barbeque the next day simply split open a piece of the Semita de Arroz (I found it in Western Beef and also at a latino market) and possibly break the small loaf in half for one serving, and cover with the fruit. It's really simple and tastes delicious! I served it with two Goya mango wafer cookies as well.
