Why I Love This Recipe


Ingredients You'll Need

4 tbsp oil
6 large red potatoes
1 large onion
3 eggs (beaten)
1 tbsp matzah meal
1.5 tsp salt
dash pepper


Directions

Turn oven on to 400F degrees. Grease a 9 inch square pan with 3 tablespoons of oil and put into oven. While that warms up grate the potato and onions into a bowl, add the matzha meal, salt/pepper and one tablespoon oil. Carefully add this to your hot pan and put back into the oven.


Reduce the heat to 350F and cook for about an hour. As the kugel cooks take the oil that bubbles up and baste the top with it.

I've never had red potato kugel before, but why not? I appreciate that you use only a small amount of flour as opposed to the larger amounts generally called for and which make the kugel or latkis heavy and dense.
