Quick and Easy Enchiladas

Why I Love This Recipe

The title to this recipe says it all...well except that it's really good too! :)


Ingredients You'll Need

2 cans(10oz)enchilada sauce, divided
1 pound lean ground beef
1 medium onion, chopped
3/4 cup salsa
1 pkg. (8) flour OR corn tortillas
1 cup shredded Monterey Jack cheese
1 cup sheddered mild Cheddar cheese
1 small can slicd black olives,
rinsed and drained (opt)


Directions

Preheat the oven to 375*. Pour 3/4 can of enchilada sauce in the bottom of a 9x13 baking pan. Brown ground beef in skillet, adding the onion. Add salsa and cook until heated through. Spoon ground beef mixture onto flourd tortillas. Roll tortillas up and place on top of the enchiladas sauce in the pan.Pour remainig enchilada sauce evenly over rolled tortillas. Sprinkle sliced olives over the top of cheese, if desired. Bake at 375* for 30 minutes or until cheese is bubbling.
