Why I Love This Recipe

Serve with homemade salsa or dressing of your choice.

I CREATED THIS RECIPE BASED ON A CALIFORNIA PINWHEEL RECIPE. I WANTED A VEGETARIAN ONE TO SERVE MY FAMILY AND FRIENDS WHO DO NOT EAT MEAT.


Ingredients You'll Need

1 Package Wheat Tortillas
16 oz. Cream Cheese Softened Naturally
Several Carrots
1 can Black Olives (optional)
16 oz. bag of frozen spinach
Vegetable Or Chicken Broth

Vegetables may be substituted for your favorites such as steamed zucchini, yellow squash, egg plant, red bell peppers, avocados, etc.

1 Package Wheat Tortillas


16 oz. Cream Cheese Softened Naturally


Several Carrots


1 can Black Olives (optional)


16oz. bag of frozen spinach


Vegetable Or Chicken Broth


Allow cream cheese to soften to room temperature. Using a potato peeler, peel carrots and cut off both ends. Next shave carrots using the potato peeler until you're unable to shave anymore. Blanch carrots in a little water until slightly tender not mushy. Drain and set aside in covered bowl.. Next blanch spinach in broth until slightly cooked about 5 minutes, 10 minutes if frozen. (don't over cook) Squeeze liquid out of spinach in portions by hand or place all spinach inside a piece of cheese cloth. Twist bottom of cheese cloth until most liquid is drained. Set aside in covered bowl. Drain olives and chop.


The Fun Part~ Cover work surface with plastic wrap or wax paper. Lay about 4 tortillas at a time out on clean table side by side. Use a plastic cake spatula to spread a thin layer of softened cream cheese onto each tortilla. Sprinkle on spinach and than carrots and than olives. Roll each tortilla starting with the edge of tortilla. Once rolled up lay wraps seem side down. Cut each at a diagonal. You will see a beautiful display of colors.
