Summer Days Country Cake with Blueberries

Why I Love This Recipe

This is my favorite summer cake. It's easy and light. No frosting, just some perfectly ripe blueberries (or any favorite fruit, peaches are awesome too)


Ingredients You'll Need

4 egg yolks
2/3 cup buttermilk
1 1/2 tsp vanilla
2 cups sifted cake flour
1 cup sugar
1 Tbsp baking powder
1/2 tsp salt
8 Tbsp butter, softened
1 pint fresh blueberries, or fruit of choice


Directions

Preheat oven to 350.


Grease and flour a springform pan.


Lightly break up the yolks and then add half the buttermilk and vanilla.


Combine the dry ingredients.


Add butter and remaining buttermilk and mix on low to moisten.


Beat on medium for 1 minute.


Greadually add egg mixture in 3 batches.


Pour into pan and bake about 30-40 minutes.


Cool and store wrapped until ready to serve.


Top with blueberries and serve.


Will keep several days in the fridge or 2 months in the freezer.
