This is a favorite recipe from my childhood church pot-lucks. One of the church "grandma's" named Winnie would make these, and I've been trying to recreate the recipe my entire adult life. This is close! It's a great dish for pot-lucks, bbq's, or just to have with a nice salad.

Zuppa Toscana (Olive Garden copycat; Keto-Option)
I've cooked this soup in so many ways, mixing the ingredients up, with and without potatoes or bacon, using coconut milk instead of cream, and have always had raving reviews from my kids! It's always so rich and flavorful, even in it's whole-food, keto, or low-carb version, it's usually a meal in itself! Greens Hint: If you've never tried kale, this is a great way to start. It holds better than spinach in this soup, but is quite mild.

Christmas Morning Casserole
This breakfast has been made every Christmas morning as long as I can remember. With different people’s diets, there are now two made; one with gluten free bread and one with wheat bread. Then there are those who eat sausage only and those who are vegetarians. The people who are only-sausage eaters and vegetarians have learned to sit beside each other! Sweet & Sour Turkey
From Joan S./Jill G: This recipe is from a collection of all turkey recipes that are two hole punched on the top and held together with loose leaf binder rings. It likely dates back to the 80’s. It appears to be the only recipe used from the collection. My mom only made this every Christmas Eve, which is when we celebrated Christmas. The story goes that we celebrated on Christmas Eve because my great grandmother didn’t want to get up early and go anywhere on Christmas morning. This is the first time I’ve read this recipe myself and is also the only recipe I’ve encountered that called for MSG.

Wilted Lettuce (or Spinach or Kale...)
Great as a stand alone wilted lettuce salad, or great as a foundation for adding optional toppings like nuts, cranberries, grilled onions, boiled eggs, chicken, swap out vinegar for a red wine vinaigrette, etc., or swap the lettuce for spinach or mixed power greens. Healthier option: heat canola or olive oil in a pan, cooking onions, garlic, etc, add in the vinegar/sugar and a small portion (or none) of the bacon drippings, and pour over greens to wilt.

A dedication - Be Like Mike Chocolate No-Bake Cookies
This is a family favorite, easy to do with kids, and quick! Next to Girl Scout cookies (thin mints and samoas!), Mike loved chocolate, no-bakes, holiday traditions, and family. He was an ally for social injustice, equity rights, and adopted a local squirrel outside his home - it would come inside to visit regularly, wander around, eat nuts he'd leave out for it, and wander away to return later. Mike understood life, a good life, is about relationship and choice. We hope this dedication encourages us all to be more like Mike.
